This is a gluten-free and low-carb option that tastes just like a Southern biscuit. I couldn't believe the buttery flavor they have without any butter or the tender flaky nature of these. I personally love it with stews and chilis, and I even found a soup that, when pureed, becomes a gravy. The two combined would fool most Southerners into thinking they were having traditional biscuits and gravy, but without any flour, butter, or even meat. But that's the next recipe for the soft food diet for the sophisticated palate. Until then, have fun with biscuits and get creative. I even tried mango and feta as a combo for the mix-ins, much to my delight!
