I've read it. May need to buy another copy. This cookbook comes closest to capturing the nuances of Japanese cuisine in English. Instead of hipster sushi and teriyaki stuff, this is the food normal Japanese people would eat and Enjoy. Plus, much healthier. I need to buy another copy too. Paul
